Recipe Ingredients for Pudhina Pulav :
Basmati rice – 150 gm
Pieces of ginger – 2 pieces(1″)
Natural yoghurt – 225 ml
Vegetable oil – 3 tsp
Bay Leaves – 2
Cloves – 5
Green Cardamom pods -5
Black peppercorns – 10
Water – 900 ml
Fresh Mint Leaves , chopped – 175 gm
Fresh Coriander Leaves , chopped – 1 tsp
Salt to taste
Cooking Method for Pudhina Pulav :
Rice to be cleaned well in the water and leave to soak for 1 hour.Peel the ginger and grind to make a fine paste in a food processor. Whisk in the yoghurt and set aside.Heat the oil in a pan and add the bay leaves,cardamom pods, cloves and peppercorns.When they begin to crackle add the ginger and yoghurt mixture.Now cook on a low heat for 3 minutes.Add the water and bring to the boil.Season to taste.Drain the rice and add to the pan with the chopped mint leaves.Cover the pan with a lid and cook on a low heat for 10 – 20 minutes. Drain and serve hot.
