Mint chutney is a variety of chutney. Mint, a herb, is called ‘Pudina’ in Indian language.Apart from adding the lovely green color to the chutney, the Mint in it makes you feel fresh and helps digestion. This pudina chutney recipe is a very quick and easy recipe. It can be served with Dosa, Poori, Chapati, Uttappa Akki rotti – Rice flour roti etc.Pudhina Chutney can also be made with coconut. It is served with Vegetable Samosa too.Traditionally, Mint Chutney is made at home fresh across Indian sub-continent using fresh Mint leaves together with onion, garlic and ginger. How to prepare Pudhina Chutney:
Main Ingredients :
• Pudina leaves ( mint ) : 3 handfuls
• Mustard : ¼ tsp
• Black gram dal : 2 tsp
• Dry red chilli : 4
• Oil : 5 spoons
• Tamarind : a very small ball
• Asafoetida : a small piece
• Salt : as needed
Method of Preparation:
Wash the pudina, cut the roots and stem.
Heat half of the oil in a frying pan.
Add pudina leaves, fry and set aside.
Add the other half of the oil to the frying pan.
Add mustard, black gram dal, chilli, asafoetida and fry.
Grind pudina and the fried items with salt, tamarind and water.
