Green chilli is a very well known spice for its fiery taste. Its also easily available in the market of various brands. Ensure its freshness by manufacturing date
and expiry date. It is often used for all fast food items. It can be made into paste by washing the fresh green chillies thoroughly, removing the stem and chopping into medium pieces. Further, grind them into mixture with sufficient lemon juice and salt. Don’t add water. Lemon and Salt will act as preservative to keep the paste as fresh and green in frozen form.

Indian Recipe:Mint Pulao
Recipe ingredients for Mint Pulao:
• Basmati Rice 1 cup
• Water 2 cups
• Onion 1 no
• Mint Leaves 2 fistfull
• Coriander Leaves few
• Curry Leaves 10 leaves
• Green chilli Paste as required
• Elachi 1 no
• Clove 2 no
• Garlic 2 pods(optional)
• Star Anise 1 no
• Oil 1 tblsp
• Ghee 1/2 tsp
Cooking Method:
1. Soak the rice in water for 20 mins.
2. Grind the mintleaves,coriander leaves,curry leaves, green chilli in to fine paste by adding little bit of water.
3. Cut the onion lenghtwise.
4. Heat a kadai and add the ghee and oil. Now add the cloves and elachi.
5. Add the chopped onions and saute till it becomes golden brown.
6. Now add the mint paste to it. Saute till the raw smell goes off. Now add the soaked rice,keeping aside the water.
7. Saute the rice gently for 2 mins.Now add th water and add salt.
8. You can transfer it to a pressure cooker and cook till 3 whistles or cook it in the kadai itself by closing it with lid.
9. Serve hot with raita of you choice.
