Boondi is a fried Rajasthani sweet snack made from chickpea flour.A savory version of Boondi called Khara is also made. Being very sweet, it can be stored for a week or so. Due to the need for preserving food in arid regions of Rajasthan, boondi Laddu are preferred.
How to Prepare Boondi
Recipe Ingredients:
• Gram Flour – 1 cup (Besan)
• Water – 3/4 cup
• Ghee – to fry
• Cardamoms (powdered) – 2
• Almond (Sliced) – 2
To make Sugar Syrup :
• Sugar – 1 cup
• water – 3/4 cup
• saffron – 2 pinches
Preparation method:
Sugar syrup:
Mix the sugar and water and boil the mixture till it reaches to threads consistency.
Cool slightly.
Warm the saffron in a small vessel,add a little water and rub until the saffron dissolves.
Add to the syrup.
For Boondi:
Prepare a smooth batter with gram flour and water
Heat the ghee and pour the batter over a boondi jhara so that bundis drop in the hot ghee.Fry the bundis.
Put the bundis in the hot sugar syrup and allow to soak the syrup for a few minutes.
Just wait for 15 minutes and spread the bundi evenly.
